Caramel Apple-Cardamon Cake

Ingredients:

Cake:

1/2 C light brown sugar

1/2 C dark brown sugar

1 C granulated sugar

1-1/2 C vegetable oil

3 eggs

3 C unbleached all-purpose flour

1 tsp baking soda

1 Tbsp ground cardamon

1 tsp ground cinnamon

1/2 tsp ground ginger

1/2 tsp salt

5 fresh tart apples (such as Winesap or Granny Smith) peeled and cut into 1/2" pieces

1-1/4 C coarsely chopped pecans, toasted

2 tsp vanilla extract

The Caramel Glaze:

1/2 stick (4 Tbsp) unsalted butter

1/2 C light brown sugar

pinch of salt

1/2 C heavy cream

Directions:

Preheat oven to 325 F.

Put sugars and vegetable oil in mixing bowl and beat until well blended. Add eggs one at a time, beating well after each addition. Sift together the flour, baking soda, salt and spices. Gradually add to the sugar and eggs, mixing just until well blended. Stir in apples, pecans and vanilla and pour into buttered and floured 9x13 inch baking pan.

Bake in preheated oven until toothpick inserted in center comes out clean (about 1-1/4 hours but begin checking at 50 minutes). Remove from oven and allow to cool.

To make glaze: Melt butter in saucepan and add sugar and salt. Stir until blended and cook over medium heat for 2 minutes. Stir in heavy cream and boil for 2 minutes, stirring constantly. Remove from heat.

Use a skewer or toothpick to poke holes in top of cake and pour hot glaze over the surface. Serve warm or at room temperature.
