Chili Sauce
Helen Compton

Ingredients:

18 ripe tomatoes

3 green bell peppers

6 onions

2 cups sugar

2 ½ cups vinegar

2 Tbsp salt

1 teas cinnamon

1 teas allspice

1 teas nutmeg

½ teas cloves

 

Directions:

Scald and peel tomatoes. Cut tomatoes into cubes about ½ inch. Dice peppers and onions. Use a large, heavy pot and cook tomatoes, peppers, and onions until juicy. Add remaining ingredients and cook on low heat until thick. This is usually 3 to 5 hours. (The house smells great the whole time!) During the last 45 minutes start stirring constantly.

Depending on the size of tomatoes and onions this will usually make about 5 quarts of sauce.
