Chipotle Pork
Mirboo Garden

Ingredients:

6-10 lbs bone in Pork Shoulder or Rump 

1 pint Mirboo Garden Chipotle Salsa

Small Handful of Cilantro

1 large Onion

3 Carrots

1 whole Tomato

1 tsp Garlic Powder

1/2 tsp Onion Powder

1 tsp Cumin Powder

Salt & Pepper

 

Directions:

1. Dice Carrots & Onions, set aside

2. Dice Tomato, set aside

3. Salt and Pepper all sides of Pork

4. Sear off all sides of Pork in skillet

5. Remove from skillet, leave rendered fat in pan, place pork in Crock pot (set on high)

6. Add pint of salsa to crock pot

7. Cook onion & carrot in skillet until soft, add to crock

8. Add tomato, cilantro, powdered onion, garlic and cumin to crock

 

Cook on high for first hour, then set to low for approximately 4 hours, or until pork has softened and is falling off the bone.

Warm up small flour tortillas, fill with pork and top with Pico de Gallo!
