2 large, ripe tomatoes, about 3 cups diced
¼ cup red onion, diced small
1-2 cloves of garlic (optional)
1-2 tablespoons cilantro leaves, chopped
1 tablespoon fresh lime juice
Cut tomatoes in half and holding them from their rounded end, squeeze them and twist with your fist. Turn them over the sink and shake out seeds. Then transfer to a cutting board and dice into ¼ dice pieces. Mix in the onion and the cilantro leaves and garlic if using.
Mix all together with lime juice and salt to taste. Let sit at 5 minutes before serving for best flavor.
*Use fruit such as Peaches, pineapple, strawberries or mango instead of tomatoes, leave out garlic
*Add minced jalapeño or other hot pepper to taste, starting with 2 teaspoons.
