Honey Rhubarb Vinaigrette
Chef Amy Tornquist, Watts Grocery

Ingredients:

1 Stalk Rhubarb

3 Tablespoon Dijon Mustard

1/2 cup Red Wine Vinegar

1 teaspoon chopped thyme

1 Tablespoon Roasted Garlic

Salt and Pepper to taste

1 quart Olive Oil

2 Tablespoon Honey

 

Directions:

Peel and slice the Rhubarb into half inch pieces.

Blanch it in water with 1 Tablespoon Honey

Puree the blanched rhubarb, honey, mustard, and garlic in food processor

Add salt & pepper and thyme

Very slowly trickle in olive oil
