Steak and Arugula Salad 🥩🥬

A warming salad using locally raised bison, fresh arugula, the last of this seasons peppers, and a tangy dressing, this salad is a reminder that sometimes simple really is best.

We used: Hanger Steak from Sunset Ridge Buffalo, Arugula from @maplespringgardens, Homegrown peppers grown from Hurtgen Meadows plant starts, Garlic from @everlaughterfarm

Soup in a pumpkin! If you want to feel warm and cozy and imagine that it feels like fall outside, this recipe is for you. It’s hearty, nutrient dense, and so delicious. The real key here is to scrape the sides of the pumpkin as you serve it 👌

We used lots of market goodies for this one, including: Pumpkin and red potatoes from Hurtgen Meadows, onions from Lyon Farms, kale from @lilfarm, breakfast sausage from Meadow Lane, garlic from @everlaughterfarm, homemade bone broth from @ficklecreekfarm soup bones, flour from @redtailgrains

Pumpkin chili was the winner of last week’s vote, and this pumpkin chili did not disappoint. It was simple to make, flavorful, and the perfect hearty meal for these rainy days.

We made ours using peppers from Southwind Organic Produce, Onion from Hurtgen Meadows, Pumpkin from Roberson Creek, Beef from Fickle Creek Farm, and Bone Broth made from Sunset Ridge Buffalo soup bones. You can easily make this a vegetarian meal by leaving out the meat.

It’s winter squash season at the market! This simple recipe adapted from @therealfooddietitians highlights one of our favorite winter squashes, the acorn squash.

Mario’s (Meadow Lane Farm) peanuts were the inspiration for this week’s market recipe. As soon as we saw them we knew exactly what to make: Thai Peanut Tacos. Every single fresh ingredient came from the market. We are always amazed by what all can be grown within 70 miles of the market! Our Peanut Sauce recipe came from Cookie and Kate. Enjoy!
